Cream Cheese Glazed Lemon Bars


For the Zone Diet

4 Tbsp Butter
3 oz Cream Cheese, Low Fat, Neufchatel
1 cup Egg substitute
1 tsp Extract, lemon
1/4 cup Flour, All-Purpose
3/4 cup Fructose
.06 oz Gelatin desserts, lemon, dry mix, sugar-free
6 Tbsp Lemon juice
1-1/4 cup Protein Powder
6 Tbsp Water
2 tbsp Splenda

Place the butter, protein powder, flour and 4 tablespoons of water in a mixer bowl and mix until crumbly. (add more or less water depending on the mixture, it should be moist and crumbly NOT wet and sticky) Press evenly into the bottom of the pan. Bake 15 minutes or until just browned in a 9x13x2 glass dish sprayed with non stick butter spray. Allow to cool while you prepare filling. Mix together egg substitute. 3/4 cup fructose, 5 Tablespoons lemon juice, lemon gelatin, lemon extract, 2 tablespoons of water, mix well. Pour over slightly cooled crust and put back in oven for 30 minutes or until set, watch that it does not become too brown. Then take 2 Tablespoons splenda, 3 oz cream cheese 1 Tablespoon lemon juice, mix together and drizzle over the top when completely cooled. Cut into 12 pieces.

For the Atkins Diet

5 eggs
1 tsp Extract, lemon
1/4 cup Flour, All-Purpose
1 cup Splenda
.06 oz Gelatin desserts, lemon, dry mix, sugar-free
6 Tbsp Lemon juice
1-1/2 cup Atkins Bake Mix
6 Tbsp Water
2 tbsp Splenda

Place the butter, Atkins bake mix and 4 tablespoons of water in a mixer bowl and mix until crumbly. (add more or less water depending on the mixture, it should be moist and crumbly NOT wet and sticky) Press evenly into the bottom of the pan. Suz, I want to make these but I'm not on either one of those ways of eating. I just need to replace egg sub. and protein powder or the Atkins bake stuff. So, if I replace egg sub. with 2 real eggs, (or shoud it be one) that would work, right? What do I replace the protein powder or Atkins bake mix with?

Do the Atkins version with the 5 eggs. Then you can just use regular jello and maybe add another a half a cup of regular sugar unless you like them tart. For the crust you can substitute the Atkins bake mix with a yellow or lemon cake mix.
