Found this acouple of years ago looking for info and pit barbequeing pigs. It's real close to one of the most informative and funniest articles I've ever come across. Unfortunately, I've never had the opportunity to try it (my wife won't let me build it in the front yard, so I'm just gonna have to wait for new front yard or a friend with a more adventurous wife).
