Shrimp Cakes with Lime Sauce

½ red bell pepper, coarsely chopped
3 green onions, chopped
2 garlic cloves, chopped
½ cup mayonnaise
1 large egg
1 tablespoon fresh lemon juice
2-3 teaspoons Louisiana Seasoning
1 pound, cooked, peeled and deveined shrimp
3 cups fresh, soft breadcrumbs, divided
Vegetable oil
Lime sauce

Combine first 3 ingredients in a food processor, pulse until finely chopped. Add mayo and next 3 ingredients; pulse until blended. Add shrimp, pulse until coarsely chopped. Site in 2 cups breadcrumbs.

Shape soft mixture into 12 patties. Coat patties with remaining breadcrumbs.

Place a large, lightly oiled nonstick skillet over medium-high heat. Cook patties, in batches, 3-4 minutes on each side or until lightly browned. Serve with Lime Sauce. Yield: 6 servings.

Lime Sauce

1 cup sour cream
1 teaspoon grated lime rind
2 tablespoons fresh lime juice
¼ tsp salt

Combine all ingredients stirring until well blended. Yield: 1 cup.

Hey Babe, long time no talk!

I love shrimp!! Your recipe sounds wonderful! Now I'm on a search for some decent shrimp. It's very hard to get those here in central NC.

I am very fortunate to live on the Texas Gulf Coast, we are very proud of our shrimp, they're the best.

The cost of shipping is ridiculous. Or I send ya some.

Gulf Coast jumbo shrimp $5.99, cooler, $2.99, shipping $65.00. The look on my Mom's face in upstate N.Y. when she receives them........priceless.

This looks gooooooood. Good to see you babe!! You're right about our gulf shrimp. About time to make a shrimp run. July is the best month.
