1 lb. dried pintobeans, picked over and rinsed
3 slice bacon, chopped or 1/4 lb. salt pork, diced
2 jalapeno peppers, pierced with a fork several times
1 c. chopped onion
1 T. minced garlic
2 tsp. salt
1/2 c. flat beer
1/2 c. chopped fresh cilantro
Soak beans in water to cover by 2 inches in Dutch oven or large sauce pan overnight, drain. Return beans to pot. Add bacon, jalapenos, onion, garlic and salt. Add enough cold water to barely cover beans. Bring to a boil. Reduce heat and simmer uncovered util beans are soft and liquid is thickened, about 2-3 hours, adding water as needed. Stir in beer; simmer 15 minutes more. Stir in cilantro, discard jalapenos, and serve. If you like, you can chop up the jalapenos and leave them in the beans for spicier flavor.
