Icing:
1 stick butter or margarine (softened)
2 - 3oz pkgs cream cheese (softened)
1 box powdered sugar
2 tsp. vanilla
chopped nuts (if desired)
Cake:
3 egss beaten
1 1/4 c. vegetable oil
2 c. sugar
1 tsp. cinnamon
2 tsp. soda
2 tsp. vanilla
1 tsp. salt
1 sm. pkg coconut
2 c. shredded carrots
1 c. chopped nuts (walnuts or pecans)
1 sm. can crushed pineapple with syrup (don't drain)
Mix the cake ingredients together and bake at 350 degrees for 50 minutes . When cake cools, cream icing ingredients together and spread over cake. This cake is very moist. It is my great aunt's recipe and I've never had any better!
