1 15oz. can black eyed peas with jalapenos
1 1/2 lb. ground beef
1 lg. onion, diced
2 cloves garlic, chopped
1 10 oz. can tomatoes w/green chilies (Rotel)
1 can cream of mushroom soup
1 can cream of chicken soup
1 10 oz. can enchilada sauce
1/4 tsp. hot pepper sauce
16 corn tortillas, cut in 1/8's
2 c. sharp cheddar cheese
Brown ground beef, onions, and garlic. Stir in remaining ingredients except tortillas and cheese. Alternately layer meat mixture and tortillas beginning and ending with meat mixture, in 9x13 pan. Sprinkle cheese on top and bake at 350 degrees, 35 minutes or until bubbly.
