Blueberry Buckle
Set oven temp: 375 F Bake time: 45-50 minutes
Mix together thoroughly:
3/4 cup sugar
1/4 cup soft shortening (vegetable)
1 egg
Stir in:
1/2 cup milk
Sift together and stir in:
2 cups all-purpose or unbleached flour
2 teas. baking powder
1/2 teas. salt
Just before baking add: 2 cups frozen, fresh or well-drained, canned blueberries
Sprinkle top with crumb mixture:
Mix together
1/2 cup sugar
1/3 cup flour
1/2 teas. cinnamon
1/4 cup soft butter
Spread batter in greased 9" square pan. Sprinkle with topping. Bake until wooden pick comes out clean.
