Warlady's Texas Chili Recipe

I can't find my recipe so I'm going to make a stab at writing it from memory.

3 lbs. cubed beef
2 lb. diced skirt steak or venison steak
1 gallon homemade chicken stock
3 large onions diced
1 garlic clove minced
1-3 whole fresh jalapeno's chopped
1 whole habanero (optional)
1/2 cup chili powder
1/4 cup cumino
1/4 tsp cinnamon
salt, red and black pepper to taste
1 can beer
1/4 cup Masa Harina mixed well in 1/2 cup water

Brown meat and vegetables add all remaining ingredients except Masa and simmer for a few hours on low. About 30 minutes before serving add masa mixture. May be served over rice.

Warlady...it sounds fantastic!
I'm always looking for something new to make for the Kelly crew. Maybe this weekend...I'll let you know how it comes out.

Yummy yummy...now I'm hungry..again..I mean still...I mean always..

Chili Recipe


Is it 5 alarm with 1 whole habanero (optional).

Looks great, but where are the beans??? Just kidding..

Keith, tacitus and I were passing around some good Italian dishes on the "mafia" thread in "the Twilight zone"...
It did not fit in really well.

Kelly, the chili is great as long as you don't feed it to the baby AFTER it's born. Did you see "Mr. Mom"?

Your recipes look pretty good as did Keith's. But some may need a translator..Otherwise we'll need a dictionary forum also.

Wahoo! Chili with Onions. The way G-d intended. The way my mother fixes it. That New Mexican stuff is good but it has no top tongue and finishes dry. Onion adds just enough complex sugars to bring the rather flat chili pods to life. And its wonderful with risotto con funghi. Donta worry, itsa coming......Isa cooking food for da rest of the week as Isa doing the midnight oil burning!

How about 100 Jalapenos instead of one habanero. Those things look pretty, but they kill. glug glug glug glug glug. My mouth is still on fire just thinking about it. LMBO

I enjoy the spice of the habanero.....friends once "tricked" me into eating a salsa made from these, a little onion and about 1/2 tomato. I was the only one to try it that night.....regretted it the next morning

One in a batch of chili doesn't sound too hot for me at least. Then again I think Tabasco with a shot of vodka is a good Bloody Mary.

Bloody Mary Warlady style

Three fingers of vodka
3-5 dashes of Tobasco (sober 3, hangover 5)
2 splashes of Worchestershire sauce
3 shakes of celery salt
Ice
Shaken not stirred
squeaze of fresh lime
top with fresh ground black pepper and garnish with a stick of celery

warlady, never seen a chili recipe like this one before sounds hot and yummy. My question since i am a novice at cooking compared to you. i assume you save the stock from boiling the chicken perhaps freezing it til you need it later for the chili? then what is skirt steak i know what venison is just don't get it anymore. and what is masa harina? thanks i will be looking back to see if my questions are answered or you can send it to me in email. thanks can't wait to try it. but i did see a good point no beans? never heard of chili with no beans. hmmm? interesting to say the least. and how to get a gallon of homemade chicken stock just to be sure i know. do you add water to the stock left over to make it a gallon? thanks for your attention on this lengthy note. lol but you know me well enough by now. hahahha

Mom, you can make your stock ahead of time using a whole chicken or chicken hind quarters are good and cheap too. It doesn't have to be exactly a gallon. Masa Harina is in the baking section of the grocery store and will be near the corn meal. It's just finely ground Masa. You can use skirt steak/fajita, sirloin, flank steak or whatever is on sale. It will get tender so you can use less expensive cuts of meat. Even round steak is good. You can put pinto or kidney beans in it we just don't. That's chili con carne.

To my surprize, I found the Masa Harina...at the store today. But this YANKEE is skipping the habanero!!! I'm a wimp.
I'll let you know how I do.

Ahhh. the Habanero pepper.....

The Jalapeno pepper is but a mere stepping stone to the ultimate pepper nirvana..... The Habanero....

Truthfully, treat those Habanero babies with respect. I ate a toasted one once.... thought a nuclear warhead had gone off in my mouth. I use the sauce now in moderation.

Sonarman's Live Grenade Hot Sauce (Medium Hot)
12 Jalapeno peppers
8 tablespoons red wine vinegar
1 whole lime
1 tablespoon sugar
1/2 tbs. salt
1/2 tbs. onion powder
1/2 tbs. garlic powder

Cut hot pepper in half and remove seeds. Drop in boiling water for 30 seconds to blanche. Squeeze juice from lime and combine hot peppers and all other ingredients in blender and chop. Now put them on high speed to blend all ingredients together. Store in an a wide mouth jar and store in the fridge.

It's simple to make and 100% natural. Scoop it out with a spoon. Delicious on pizza, cheesesteaks, hamburgers, added to soups, chili or tomato sauce.

This sounds great, inspite of the "HEAT"... I just can't take those hot peppers... even jalapenos!!! Upsets my GI tract! Never have heard of Habanero pepper..... yikes! I have a son-in-law who eats jalapenos like pickles... he would love habanero's!

Thing I love about chili... there are so many wonderful ways to make it!!! Even out of the can... in a pinch! images/icons/grin.gif
