Cajun Dirty Rice
4 Tbsp. cooking oil
2 Tbsp. flour
1 lb. chicken gizzards (trimmed)
1/2 lb. pork liver
1/2 lb. chicken livers
2 cloves garlic, chopped fine
3 med onions, chopped fine
1/4 cup celery, chopped fine
Med bell pepper, chopped fine
1 pint oysters
salt and pepper to taste
1 tsp. Old Bay Seafood seasoning
1 tsp. red pepper
1 bunch green onions chopped
4 Tbsp. parsley
4 cups cooked rice
Grind gizzards and liver in food processor. Make roux with oil and flour until dark brown. Add meat, garlic, onions (not green onions), bell pepper and celery and simmer until tender. Add green onions, oysters and parsley and simmer for about 10 minutes. Gently fold into rice until well blended.
