4 large ripe but not over-ripe avacados (peeled and pits removed) Do this right before serving or they will turn brown.
lettuce leaves washed and drained
4 salad plates, chilled
1-2 pounds of boiled shrimp, peeled and deveined
Remoulade Sauce
1 cup mayonnaise
1 Tbsp. Dijon Mustard
2 Cloves garlic
1/4 cup celery w leaves, chopped
1/4 cup green onions, chopped
1 Tbsp. parsley
1 Tbsp. wine vinegar
1/2 tsp. lemon juice
1/2 tsp. Old Bay Seafood Seasoning
1/4 tsp. salt
1/4 tsp. Filet' gumbo seasoning
1 hard boiled egg, grated
Make this ahead of time and chill then toss with shrimp and re-chill.
To serve place the leaves on the plates and top with avocado halves. Over-stuff with shrimp and garnish with lump crab meat (optional).
