Wish I had seen this earlier. I found a couple of patterns for pumpkin carving some years back. They were designed to only remove the outer layer of the pumpkin (of course you had to gut it too).

You didn't cut all the way through the shell, just went a quarter inch or so into it. It made for a VERY cool effect when lit from the inside.
