Mix 'N Match Quiche

1 cup grated cheese (your choice)
1 cup half & half
4 large eggs
1 unbaked pie shell
1 cup filling*
1 teas. salt
1 1/2 teaspoon herbs (your choice)
1/8 teaspoon pepper
Preheat oven to 350 degress F. Beat the eggs. Brush pie shell with beaten egg and pre-bake for 5 minutes. Allow to cool for a few minutes. Combine cheese and filling ingredients and place in the pie shell. Dust with the salt, pepper and herbs. Combine half & half and eggs; pour over all. Leave alittle room for expansion.
Bake 30-40 minutes until golden brown and knife inserted in the center comes out clean. Allow to rest for about 10 minutes before serving. (you may want to place the pie pan on a cookie sheet in case of boilover)
*Fillings--anything you want to equal the cup. Ideas include spinach, chopped broccoli, onions, green pepper, crab, shrimp, browned sausage, fried bacon, ham, etd.
