Red Rice

4 slices crisp crumbled bacon
1 onion
1 celery stalk, chopped
1 c. uncooked rice
1 16 oz. can tomatoes
1/2 c. water (give or take 1/4 c.) *depends on how much liquid is in tomatoes, you can add water while baking.
1 tsp. salt
1/4 tsp. cayenne pepper
Fry onion and celery in bacon fat. Remove some of the bacon fat before adding rice, tomatoes, water, salt and cayenne pepper. Combine ingredients and transfer to 1 1/2 quart baking dish. Spray with non stick cooking spray for easier clean up. Bake at 350 degrees until rice is done, approx. 30-45 minutes. Stir in bacon pieces.
