BBQ Sauce

Spicy & Sweet BBQ Sauce

3 cans Tomato puree (14oz)

1 cup catsup

1 cup packed brown sugar

1 cup honey

1/3 cup molasses

1/4 cup dark balsamic vinegar

1 tsp kosher salt or plain salt

1 1/2 tsp black pepper

1 tbsp garlic powder

1 tbsp onion powder

3 tbsp A-1 sauce

1 tbsp liquid smoke

1 1/2 tsp Cajun seasoning

1 tsp Chipolte chili powder

1 tbsp soy sauce

1 tbsp lemon juice

2 tbsp yellow mustard or Dijon mustard

2 tsp Worcestershire sauce

1/4 cup bourbon (optional)

1 small white onion fine chop (use food processor)

Note: The alcohol from the bourbon will cook out of the sauce.

Combine all ingredients in a large sauce pan and simmer over low heat for about 1 hour. Stir occasionally to prevent sticking. Allow to cool before freezing.

This sauce is sweet and spicy and the heat can be increased by adding another teaspoon of Chipolte chili powder.

Remember that all sauces with sugar and a tomato base will burn when exposed to high heat. To avoid this, don't put any sauce on the food until the food is almost cooked.

Serve some warm sauce with the food for dipping.
