Thai Cucumber Salad

This is good if you like spicy food!
2 tsp. sugar
1 tsp. red pepper flakes
1/2 tsp. salt
1/2 tsp. paprika
1/4 tsp. black pepper
1/8 tsp. cayenne pepper
1 clove garlic
2 large cucumbers
2 T. sesame oil
2 stalks celery, diagonally sliced, 1/4 inch thick
1 c. sliced red onion
1 T. fresh lemon juice
In a small bowl, combine sugar, red pepper flakes, salt, paprika, black and cayenne pepper, and garlic. Set aside. Peel cucumbers leaving alternating 1/4" strips of the green skin. Halve lengthwise; remove seeds; slice 1/4" thick. Heat oil in wok or large skillet over high heat. Add cucumbers, celery and onion; stir-fry 2 minutes. Add spice mixture; stir-fry 1 minute. Add lemon juice: stir fry 2 minutes until most os the liquid is absorbed. Place in bowl; cool slightly. Chill a few hours. Serve at room temperature.
