Sonar's post reminded me of a recipe given to me by a neighbor when I was growing cucumbers one year and had more than I could give away. This is a great recipe and really easy as you don't have to worry about canning and sterilizing.
Refrigerator Relish
7 c. cucumber, unpeeled and thinly sliced
1 c. green pepper, diced
1 c. onion, sliced
1 T. salt
Mix above and let stand 1 hour. Drain.
Add:
2 c. sugar
1 c. vinegar
1 T. celery seed
Refrigerate in pint or quart jars. This will keep for months!
