Tex-Mex Macaroni and Cheese

12 ozs. wagon wheel pasta
4 T. butter
1 medium onion, minced
3 jalapeno peppers, seeded and minced
1/4 c. flour
1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. cumin
1/4 tsp. pepper
2 1/2 c. milk
1/2 lb. shredded cheddar cheese
1/2 lb. shredded monterey jack cheese
Preheat oven to 350. Butter a 2 quart casserole. In a large pot of boiling salted water, cook pasta until softened. Drain and set aside. In a large saucepan, over medium heat, melt butter. Add onion and jalapeno peppers and cook until tender, about 5 minutes. Stir in the flour, chili powder, salt, cumin and pepper. Cook 1 minute. Stir in milk and cook, stirring constantly, until sauce thickens. Remove from heat and stir in cheeses until melted. Stir in pasta, tossing to coat. Put in prepared casserole dish and bake until hot and bubbly, about 25 minutes.
