Primo Roast Pork with Black Beans and Rice

Roast:

2-3 lb. boneless pork roast
1/3 c. fronzen orange juice concentrate (thawed)
2 tsp. finely shredded lime peel
1/3 c. lime juice
2 T. cooking oil
4 cloves minced garlic
1 T. dried oregano

Combine all ingredients except roast to make a marinade. Butterfly roast and seal in a ziploc bag overnite with the marinade. Heat oven to 325; roast 2 3/4 - 3 1/2 hrs. Serve with the following:

Black Beans and Rice:

1/2 c. chopped onion
1/2 c. chopped bell pepper
2 cloves garlic, chopped
2 tsp. cumin
1 tsp. chili powder
1/2 tsp. salt
1 T. vegetable oil
2 1/2 c. water
1 c. water
2 cans (15oz) black beans (rinsed and drained)

Saute in sauce pan the onion, pepper, garlic, cumin, chili powder, and salt in oil for 2 minutes. Add the water and bring to a boil. Add rice. Transfer mixture to a 2 quart casserole dish with a lid. Bake at 325 degrees for 30-45 minutes. Add beans to the rice mixture (do not stir them in, leave on top). Return to oven for 5-10 minutes longer. Remove from oven. Stir rice and beans together. Top with chopped tomato, scallion, and cilantro.
