Dry Rub

Basic Rub
1 cup packed brown sugar
1 tsp salt
1 tbsp black pepper
1 tsp onion powder
1 tsp garlic powder
Mix in a plastic container. Makes about 1
cup of rub. Store left-overs in an airtight
container in the refrigerator.
For those that like a little spice in your life.

1 cup Basic Rub (see above)
1/2 tsp Chipolte powder
1/4 tsp Cumin powder
3/4 tsp dry Mesquite seasoning
1 tsp Paprika

Mix well and apply to the meat. Cover with plastic wrap and refrigerate at least 6 - 12 hours.
If you want to add more heat to this rub, add 1 tsp Cayenne pepper and increase Chipolte powder to 1 tsp.

For those of you that like to smoke food, in the smoker that is, rubs are the best thing that ever happened to smoked food.


This is not recommended for any fish, it's really too overpowering for that.
