Pork Green Chili
1 lb pork roast, cubes
12 chili's roasted and chopped - Anaheim & Pablano mixed
6 chicken bullion cubes
1 medium onion diced
1 28 oz can whole tomatoes peeled and chopped
1/2 tsp garlic powder
1/4 cup flour
2 tbsp oil
5 cups boiling water
Brown the pork and onions in a large pan with the oil. When cooked, add the chopped chili's and cook for another 5 minutes. Stir in the flour making sure all lumps are gone. Add tomatoes, 5 cups of boiling water, bullion cubes and garlic. Stir all ingredients well and let simmer over low heat for 1 hour. Stir to prevent sticking.
This freezes well, and can be used over eggs, breakfast burritos, burritos of any kind, or anything else you want to spice up a bit.
