Harlot's Sauce

Salsa alla Meretrice (Harlot’s Sauce)
4 ½ cups of Italian plum tomatoes pulsed in a food processor
2 cloves of garlic minced
2 tbsp. Olive oil
8 anchovies (remove any small fine bones) minced
8 stuffed green olives chopped
8 black olives pitted and chopped
1 tsp capers chopped
1 tsp dried sweet basil
¼ tsp crushed red pepper
¼ tsp oregano
½ tsp dried parsley
Sauté the garlic in oil over low heat until soft; add the anchovies. Watch the mixture and when the anchovies have broken apart, add the tomatoes and simmer over low heat for about 10 minutes. Gently blend in the olives and the dry ingredients. Simmer uncovered for 20 minutes, or until the sauce has thickened.
Serve with a thin spaghetti cooked al dente.
Makes about 4 cups.
While you may have the urge to leave out the anchovies, don’t; they add a very unique flavor to the sauce.
