Risotto con funghi or rice with mushrooms

Dis isa great dish for making rice exciting. Firsta ya needs about an ounce of dried mushrooms. Yes, one single ounce. Ya soaksa desa little things in watur fora bout an hour. Keeps the water. Yuo donta throw away any thinga in my kitchen unless you canta eat it!

Back to da dish. After the funghi is soft, chop them up, kinda fine. Heat a suacepan and add 3 tablespoons of butter, two tablespoons of cooking olive oil, a quarter onion, chopped kinda fine and the funghi. Cook over medium heat until the onions are clear. Add 1 1/2 cups of Arborio rice. You ain't gonna find this at your local store unless the guy running it is named Vinny, Guida, Tony or Vic. Pauli is in the butcher shop. Stir the risotto until all is mixed over just a wisp of heat.

In anotta pot, bring to boil 2 cups of stock and enough water with the funghi water to make 5 cups. yes, this is going to be a little wet. Once itsa boiling, take some out and add it to the rice. Keep the rice just barely covered, simmering low. You gonna have to keep adding until the risotta is al dente. You donta want mushy rice? Just likes pasta, only no draining. Once its done, spice it up witha little salt, pepper and grate in some of that great Locatelli Parmesan cheese. Ok, Mrs. Kelly, you can add some pecorino Romano. But you better grate it yourself or get that hubby of yours in da kitchen.
