I'm no vegetarian but its Lent and I'm a practicing Catholic(not exactly devout as the Church doesn't like my guns)so to break the fish routine, I offer the following:
Lentils and rice, an Indian style receipe.
1/2 yellow onion, chopped fine
2 cloves of garlic, ditto
1 cup of washed and sorted lentils, soaked for 2 hours in hot water (180 F)
2 cups of regular long grain rice
1 tsp cumin
1 tsp coarse Malabar black pepper
1 tsp Kosher or sea salt (adjust/substitute as desired)
1/4 tsp ground celery seed
1/2 tsp paprika
2 tblsp olive oil
3 grated carrots
4 cups of warm water.
Heat a 4 qt stockpot and add oil. Fire about medium. Sautee onions until edges are light brown, about 5-8 minutes. Add garlic and sautee for another 2 minutes. Add spices and continue for another 30 seconds before adding water. Bring to boil and add lentils. Cook for 10 minutes. Add carrots and bring back to boil. Add rice, bring again to boil and cover, reducing heat to simmer for 18 minutes. At the end of the 18 minutes, turn off heat and allow to sit for 10 minutes.
6 servings (for vegetarians) or 8-10 as a side.
