Oriental Skillet
1 lb. ground beef
27 saltine crackers, crushed
1/4 c. onion, finely chopped
1 1/2 tsp. ground ginger
1 clove garlic, minced
1 egg, slightly beaten
2 T. water
2 T. vegetable oil
16 oz. frozen mixed oriental vegetables, thawed
1 c. beef broth
2 T. soy sauce
1/2 c. water
2 T. cornstarch
Combine ground beef, crackers, onion, 1/2 tsp ginger, garlic, egg, and 2 T. water. Shape into small meatballs. Heat oil in skillet and and cook til done. Remove meatballs, drain skillet, and add veggies, broth, soy sauce, and 1 tsp. ginger. Blend water with cornstarch. Add to skillet, stir until mixture boils, add meatballs, cover and simmer 5 minutes. Serve over rice.
