Sausage with Potatoes and Peppers
1 T. olive oil
1 1/4 lb. sausage in casings, cut into 2 inch pieces, a mixture of sausages is best
1 large onion, cut into thin wedges
1 small red pepper, cut into 1 inch strips
1 small green pepper, cut into 1 inch strips
6 small red potatoes, quartered
1/2 c. dry red wine
1/2 c. marinara or tomato sauce
1/2 tsp. dried basil
pinch of crushed red pepper flakes
In a large skillet, heat the olive oil over medium high heat. Add the sausage and cook, turning until nicely browned, 5-7 minutes. Pour off all but 1 T. of the fat. Add the onion, bell peppers and potatoes, mix well. Pour in the wine, then the marinara sauce, basil and crushed red pepper. Cover and simmer over medium low heat until the potatoes are tender, about 20 minutes.
