2 T. butter
6 8" flour tortillas
4 c. shredded monterey jack cheese
12 slices bacon, cooked and crumbled
1 small Roma tomato, peeled, seeded and chopped
4 pickled jalapeno peppers, finely chopped
1 tsp. ground cumin
Spread butter on one side of each tortilla. Place tortillas, butter side up, on ungreased baking sheets. Bake at 400 for 3 minutes or until lightly browned. Combine cheese and next 4 ingredients, sprinkle evenly over tortillas. Bake at 400 for 5 minutes or until cheesed is bubbly. Cut into fourths, serve with sour cream, salsa and guacamole.
