Red Eye Gravy
Add water (or black coffee) to fried ham drippings in a hot pan. Let sizzle and stir. Serve with country cured fried ham slices, biscuits, and honey.


This is an old southern favorite. My grandma use to make it every morning for breakfast. She lived in the country, in the hills of Oklahoma. She'd go collect her eggs from the hen house, make a bunch of bacon, eggs, & biscuit with red eye gravy.

HINT: Once I decided I'd try to use instant coffee to make this. It doesn't work... it was awful!!

HINT #2: I have a friend who is cajun. She says this [my recipe] isn't how you make red eye gravy. She says you use tomatoes, and a bunch of other stuff... the tomatoes are what make it "red" eye gravy... according to her. She is wrong... as cajuns usually are!!!! images/icons/grin.gif
