Classic Coleslaw

1 small head green cabbage, cored and sliced as thinly as possible
1 small head red cabbage, cored and sliced as thinly as possible
4 celery stalks, finely chopped
4 scallions, green and white parts, finely chopped
4 carrots, shredded
1 cup mayonnaise
3 Tbs fresh lemon juice
2 Tbs caraway seeds (optional)
1 Tbs celery seed (optional)
Salt and freshly ground pepper to taste

Place the cabbage in a large bowl and cover with ice water. Refrigerate for at least 1 hour and drain thoroughly. Combine the cabbage, celery, scallions, and carrots in a large bowl. Mix together the remaining ingredients in a separate bowl and pour over the cabbage mixture. Toss to combine well and refrigerate for at least 1 hour before serving. Serves 6 to 8.

My Mom loves the kind KFC sells. She even will just buy it for hotdogs or BBQ's and not buy any chicken. LOL

Wonder if she would find this similar? It seems to be from what I remember anyway.

Suzie... there is a site (someplace out there in cyberville) that has recipes from various "famous places"... KFC's slaw recipe is on it. Sorry, I don't know the link.

Ladyhawk108... this does sound good! My family loves coleslaw! Which makes me happy because it is really nutritious.

I use to have a coleslaw recipe that was some sort of vinegarette with toasted seasame seeds & ramen noodles... you marinated it overnight. It was really good. Haven't been able to find it. Anybody happen to know it?
