My daughter made this the other night and it was great!

1 lb. mild fish (she used tapia (talapia) filets)
dijon mustard
your favorite cracker crumbs (she used ritz)
eggs
thyme
melted butter

Basically, you season the cracker crumbs with your favorite herbs and spices,
dill and onion powder was great. You beat the eggs with the thyme and dijon mustard. About 2 T. dijon with 2 eggs and maybe alittle less than 1/2 tsp. thyme. Dip the filets in the egg mixture, then coat with cracker mixture. Drizzle with melted butter and bake at 500 degrees for 5 minutes. Turn filets and drizzle with butter, bake for 5 more minutes until filets flake with fork.

Your recipes are always good ive tried several.I like your new picture.You're a very nice looking lady.Try any kind of fish diped in melted butter and rolld in crushed sour cream and onion potato chips and baked for 25 mim at 350. Very good!! How is Mule? I hope its ok to ask.

Fireman, your recipe sounds great! I will definately give that a try. Mule is doing a little better. He's having a very slow recovery, but has finally figured out that he is going to have to rest to get better. Thanks for your concern.
