Santa Fe Fajita Beef Salad
Serves 4
Ingredients
3 tablespoons vegetable oil
2 tablespoons lime juice
2 tablespoons soy sauce
1 tablespoon water
1 1/4 teaspoon lemon pepper
1 teaspoon garlic powder
1 (16-ounce) sirloin steak, cut into strips
6 cups assorted salad greens
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
2 cups tortilla chips
Preparation
· Combine oil, lime juice, soy sauce, water, lemon pepper and garlic powder in sealable plastic bag; mix well. Add steak strips, tossing to coat.
· Let stand for 15 minutes, turning bag occasionally.
· Cook steak and marinade in skillet over high heat for 2 to 3 minutes or until steak is done to taste, stirring constantly.
· Arrange salad greens on serving platter; spoon steak and marinade over greens. Top with bell pepper strips. Arrange tortilla chips around edge of platter. Garnish with sliced green onions and guacamole, if desired.
