Justin Wilson's Potato Salad


6 OR 8 Russet Potatoes with Skins left on
2 Onions Chopped
Pimentos Chopped
Sweet Pickle Relish
Dill Pickle Relish or Chopped Dill Pickels
1 Big Tablespoon of Lousiana Hot Sauce
8 or 9 Strips of Fried Bacon Crumbled
A Little Bacon Grease
Mustard
Mayonnaise
Beat mayo, horseradish sauce, olive oil, salt and piquante sauce. Mix all other ingredients in a large bowl and then mix in the sauce. Note that the potatoes should be broken into chunks by the spoon that you are mixing with. Justin seemed to think that it was important to not cut the potatoes, just to break them up as you are mixing.

This is really good! I use this recipe, or something really close to it. I don't use the pimentos, but will try it. I am with Justin... the hunks of potatoes make this not "mushed together." This is one of those recipes everybody eats it all up, asks for the recipe, etc.

I was upset to hear Justin Wilson passed away last year. I didn't know it until they showed those year end Memorial clips they have every year. Even then it was dwarfed by the 9/11 events. I loved to watch his shows! I am shocked his Tater Salad doesn't contain "a lil wine, and then a lil moe wine!" images/icons/wink.gif

Somebody quit at work... my part time job has been temporarily bumped to more time until they get a replacement for the quitting person. Plus, they built a new building... everybody is in a tizzy over moving into it... which amounts to more work because everybody is less efficient because of all the tizzy stuff.
