1-1/2 cups Cooking Oil
2 cups Sugar
3 Eggs
2 teaspoons Vanilla
3 cups Self-Rising Flour
3 cups Peaches, peeled and diced
1 cup chopped Pecans
1 cup Coconut
Mix all cake ingredients together as listed. Grease and flour Bundt pan. Pour in cake mixture and bake in preheated oven at 350 for 1 hour or until done. Let cool.
Icing:
6 teaspoons pureed Peaches
1 (3 oz.) package Cream Cheese
1-1/2 cups powdered Sugar
Mix cream cheese, peaches and powdered sugar together and spread over cake.
